Easy Air Fryer Roasted Baby Potatoes

Ingredients

  • 3 lbs baby red and gold potatoes
  • 2 tbsp extra virgin olive oil
  • Sea salt and freshly ground black pepper to taste
  • Any other seasoning or herbs optional if desired

Instructions

  • Wash the potatoes and scrub them thoroughly.
  • Cut the baby potatoes in half or into bite-sized pieces. If you aren't using baby potatoes, you'll need to cut the potatoes into small, bite-size pieces.
  • Using a paper towel, pat dry the potatoes and place them in a large mixing bowl.
  • Drizzle the potatoes with olive oil and sprinkle with salt and pepper. Toss them around in the bowl to get a nice coating.
  • Toss the potatoes in the air fryer basket evenly.
  • Cook at 400 degrees for 10 minutes. Toss well and cook for another 10 minutes. If your air fryer doesn't reach 400 degrees, use the closest setting it gives. You may have to add a couple more minutes of cooking time.
  • Let the potatoes cool down for a few minutes before serving.

Notes

Soaking potatoes in water before air frying helps to remove the starch from the surface of the potatoes. This starch can cause the potatoes to become soggy when air fried. Soaking also makes the potatoes crispier in the air fryer and keeps the potatoes from sticking together.
The potatoes must be tossed and adjusted halfway through the cooking process. This allows them to cook evenly and not burn half while the other half doesn't crisp well.
You do not have to boil potatoes before roasting them in the air fryer. In fact, boiling potatoes can make them less crispy when air fried. Instead, try cutting the potatoes into small pieces, so they cook evenly in the air fryer.
This recipe works with 4-quart or larger air fryers. If you're using a smaller one, cut the recipe in half or cook only half at a time.
You can use any type of oil you like for air frying. Extra virgin olive oil is a healthy option that really cooks well. Avocado oil is a great choice, too, because of how hot it can get. Of course, you can always forego the oil, but the seasonings will have difficulty sticking if you do.
There are many different ways to season air fryer roasted potatoes. My favorites include garlic, salt, pepper, oregano, thyme, and Italian herb seasoning. However, you can use whatever herbs and spices you like to create a unique flavor profile. Feel free to experiment.
