These Healthy Fruit Gelatin Gummy Snacks are a healthy alternative to conventional gummy treats. And they are so simple to make you’ll wonder why you haven’t made them yet!

Place the fruit juice and water in a small saucepan.
Sprinkle the gelatin over the mixture. Do not stir. Let it rest for about 3 to 4 minutes for the gelatin to bloom.
Place the saucepan over medium heat until it is warm, stirring continuously until the mixture is smooth. Do not let it boil.
Add the honey and continue stirring until it is incorporated into the gelatin mixture.
Remove from heat. Pour the mixture into a pan or molds, using a mesh strainer (to remove any clumps – it happens occasionally). (Note: I use a 8” x 12” pan)
Let the pan cool. Transfer the pan (or mold) to the refrigerator until the gelatin is set.
Remove the molds or pan from the refrigerator. Remove the gelatin fruit snacks from the molds.
If you have used a pan for the gelatin to set, use a small silicone spatula or plastic knife to loosen the edge of the gelatin from the pan.
Lift the gelatin from the pan and place it on a cutting board.
Cut the gelatin fruit snacks with a knife or using small cookie cutters.
Store in the refrigerator (fridge) for up to ten days
Notes
The number of pieces depends on the size of cookie cutters used. Since I make these mostly for my daughter, I like to use small cookie cutters (about 1 inch).
