Ingredients

For the Dip

  • 8 oz Greek feta cheese at room temperature
  • ¾ cup plain Greek yogurt
  • 3 tbsp lemon juice freshly squeezed
  • 1 tbsp lemon zest
  • 1 large garlic clove
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • 1 tsp dill finely chopped
  • 2 tbsp extra virgin olive oil more as needed
  • White ground pepper to taste
  • Sea salt to taste
  • 2-3 dill springs for garnish

To Serve

  • Cherry or grape tomatoes
  • Pitted whole Kalamata olives
  • Pita wedges or pita chips

Instructions

  • In a high-speed blender or food processor, combine the Feta cheese, Greek yogurt, lemon juice, zest, garlic, thyme, oregano, and dill.
  • While the processor is running, add the olive oil drizzling through the top opening until the feta is combined with the Greek yogurt into a smooth texture.
  • Taste and season with sea salt, and white (or black) pepper, to taste and pulse to combine.
  • Transfer to a serving bowl and garnish with fresh dill. Serve immediately with pita chips or pita wedges, tomatoes, and Kalamata olives.

Notes

Notes and Cooking Tips

White pepper has a slightly different aroma and taste from black pepper, and its color blends entirely with the color of the dip. If you do not have it at hand, you can always use black pepper.
Use high-quality Greek feta cheese. For this recipe, opt for feta cheese made with sheep or a mix of sheep and goat milk. Avoid pre-crumbled feta, which is too dry and often contains extra ingredients to prevent caking and won't taste as good in this recipe. 
Use high-quality extra virgin olive oil to add flavor and richness to the dip. You can taste the difference between an inferior, cheap brand. 
Serve immediately to take full advantage of the whipped, creamy goodness. When you refrigerate it, the texture will thicken, while the flavors will be intact.
If you need to make the dip ahead of time and refrigerate it, let it come to room temperature before serving.

Serving and add-in suggestions

You can serve the simple version of whipped feta, as in this recipe, with a side of vegetables and pita wedges or pita chips. 
You can also top this dip with Roasted tomato salsa.
Serve it alongside Chicken Souvlaki (skewers) or other savory kabobs for a fun entree!
You can also toast some pine nuts or chopped walnuts and sprinkle them on the dip.

Make-ahead tips and Storing leftovers

You can make the dip ahead of time and refrigerate it. Then, let it come to room temperature before serving.
Store plain whipped feta dip in an airtight glass container in the fridge for up to 3 days.
